Product Introduction
Prime brisket and prime pork are cooked in wood-fired pits without gas or electricity. St. Louis ribs and beef back ribs are slow-smoked in the same way for 6 hours until the juices are just right and the meat is tender. Camping out at the barbecue, every day, Jim Nnicks shows up early, rolls up his sleeves and smokes our low and slow meat hardwood smokes perfectly. Our pit is 100% hardwood with oak burn, which is a slower burning wood than other mesquite trees used. The pit below is used for cooking pulled ribs and drunk chicken.
